A meal for a night when you have a little more time, this is still an easy dish to make. Flavours combine in this beautfully balanced Asian inspired meal. Go easy on the chilli if you are introducing these flavours to young children.
1.6 kg whole white fish or fillets
Cooking oil spray
2 limes, sliced thinly
1 tbspn minced ginger
1 tbspn peanut oil
1 tbspn fish sauce
4 tbspns minced ginger, extra
1 tspn minced garlic
2 tbspns grated palm sugar
½ - 1 tbspn minced chilli
1 tbspn fish sauce, extra
1 tbspn lime juice
Preheat oven to 200°C.
Make four deep slits diagonally across both sides of fish. Place a large sheet of
foil, with sides overlapping, in a large shallow baking dish. Spray fish with oil,
place fish on foil. Fill fish cavity with layers of lime and ginger.
Combine oil, sauce, extra ginger and garlic in bowl, rub into cuts on fish and all
over surface. Bring foil up around sides of fish to catch cooking juices, do not
cover top.
Bake in a hot oven about 20 minutes or until almost cooked through. Meanwhile
combine sugar, chilli, extra sauce and juice and spoon over fish. Bake 5
minutes or until fish is browned and just cooked through.
It’s great with salad or crisp steamed vegies and or bread on the side.
